Cookie Salad, Let me Count the Ways

If you've never heard of Cookie Salad, it's a luscious fruit concoction that's called a salad but eats like a dessert. If you have heard of it, you've probably never tasted one just like Leslie's. She hardly ever makes them the same way twice--pudding, fruit, and cookies are all interchangeable.  Here are some of the variations. And in case you're wondering, all have been yummy.

Strawberry Orange Cookie Salad

2 cups buttermilk
2 (3-oz) packages French Vanilla instant pudding mix
1 8-oz Cool Whip
1 pint strawberries, chopped
1 small can mandarin oranges
1 package Fudge-Striped Cookies

Beat together the pudding mixes and buttermilk. Fold in Cool Whip and fruit. Chop up to 3/4 of the package of cookies into coarse chunks. Add to the salad right before serving so they remain crispy. Use remaining cookies as garnish.

Berry Chocolate Cookie Salad

2 cups buttermilk
2 (3-oz) packages Cheesecake instant pudding mix
1/2 pint raspberries
1 pint strawberries, chopped
1 package Double Chocolate Fudge Striped Cookies

Proceed as directed above.

Tropical Cookie Salad

2 cups buttermilk
2 (3-oz) packages vanilla instant pudding mix
1 15-oz can crushed pineapple, drained
1 small can mandarin oranges
1 package Fudge Striped Cookies

Proceed as directed above.
